Miracle Noodle Review: A Low-Carb Letdown or a Keto Must-Try?

One of the hardest parts of keto? Saying goodbye to pasta. Ya’ll I’ve been on the hunt for a good low-carb noodle, and when I stumbled upon Miracle Noodles, I had high hopes.

The reviews were not half bad, the price was reasonable, and I could buy a single bag instead of committing to a whole case. That felt like a safe bet. I was excited to whip up a keto-friendly spaghetti dish and finally scratch that pasta itch.

Well… I tried them. And I have thoughts. Buckle up.

The Good (It Won‘t Take Long)


To be fair, these noodles did have a few things goin’ for ‘em:

  • No funky smell - Some of these low-carb noodles come with an odor that could knock a buzzard off a gut wagon. This one? No stink, which was a relief.
  • Well-packaged - Stayed fresh and was easy to store.
  • Easy to make - Quick and simple prep, which I appreciated.
  • Super clean ingredients USDA organic, non-GMO, keto, paleo, plant-based, and certified vegan. Plus, they’re free from gluten, grain, dairy, and soy.
  • Low calorie & keto-friendly -Only 5 calories and 1g net carb per serving.

Sounds good so far, right? Right? Well, hold onto your forks, folks...

The Not-So-Good (Alright, The Downright Bad)


I pan-fried the noodles (because I figured microwaving might mess with the texture) and tasted a bite on their own. They were there. No real flavor, but I took that as a good sign maybe they’d soak up the sauce and blend into the dish.

That did NOT happen.

Instead, the noodles clumped together like they were in some kind of support group, refusing to separate. The texture turned waxy and chewy not quite rubber bands, but real close. My once-promising spaghetti dish went downhill fast. The sauce, the meat, the mushrooms nothing seemed to mix right anymore.

I gave it an honest try, but after a few bites, I set my plate aside and grabbed a salad instead.

Could I Have Cooked Them Differently?


Maybe. Some folks swear by seasoning them while cooking. Others say the microwave method works better. I do have one more serving left, so I might give the microwave a shot and see if that helps. But after this experience, my expectations are about as low as my carb count.

Final Thoughts: Worth It or Not?


I wanted to love these - I really did. But for me, they were a one-bite wonder (and not in a good way).
